Blueberry Lemon Muffins - cooking recipe
Ingredients

1 3/4 c. flour
1/4 c. sugar
2 1/2 tsp. baking powder
1 egg, well beaten
3/4 c. milk
1/3 c. oil
1 c. fresh blueberries
2 Tbsp. sugar
1 tsp. lemon peel
Preparation

Mix berries and 2 tablespoons sugar; set aside.
Mix dry ingredients in bowl.
Make a well.
Pour in wet ingredients and add lemon peel.
Mix until barely moist.
Add berries.
Pour into prepared muffin tins.
Bake at 400\u00b0 for 20 to 25 minutes.
Top with melted butter and sugar, if desired.
