Lemon Meringue Pie - cooking recipe
Ingredients

baked pie crust
1/4 c. flour or cornstarch
1 c. sugar
1 c. boiling water
2 egg yolks, slightly beaten
1 Tbsp. butter
1 lemon rind, grated (avoid using inner white skin)
1/3 c. lemon juice
Preparation

Combine sugar and flour.
Slowly add boiling water, stirring constantly.
Add butter.
Gradually add egg yolks.
Cover pan and keep over boiling water, stirring constantly, until mixture holds its shape.
Add lemon rind and zest.
Cool and place in baked pie crust.
Put in refrigerator and make Meringues.
