Diabetic Orange Whip Cheesecake - cooking recipe

Ingredients
    1 envelope plus 1 tsp. unflavored gelatin
    1 c. skim milk
    1 pt. small curd, low-fat cottage cheese
    1 tsp. vanilla
    1 tsp. orange extract
    1 tsp. grated orange peel
    artificial sweetener to equal 1/3 c. sugar
    1 large orange, divided into 8 sections and halved
    3 large eggs, separated
    dash of salt
Preparation
    Sprinkle gelatin over milk on top of double boiler.
    Beat egg yolks lightly and add to milk.
    Stir milk, egg yolks and gelatin in top of double boiler over boiling water for 5 minutes until gelatin dissolves and mixture thickens slightly.
    Remove from heat and cool to room temperature.
    Add cottage cheese, vanilla and orange extract.
    Pour into blender jar and blend until smooth. Pour into mixing bowl.
    Beat egg whites to soft peaks.
    Gradually beat in sweetener and beat to a soft meringue.
    Fold into cheese mixture.
    Coat bottom of 8-inch glass pie dish with nonstick spray.
    Pour mixture into pie dish. Chill until firm, at least 4 hours.
    Top with orange slices to serve.
    Makes 8 servings.
