Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
3 c. flour
1 tsp. soda
1/4 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
2 c. grated zucchini, peeled (small size, use all; large size, take out seeds)
1/2 to 3/4 c. nuts (optional)
Preparation

Beat eggs with mixer. Add oil, sugar and vanilla. Mix together in separate bowl the flour, soda, baking powder, salt and cinnamon. Combine with first mixture.
Add zucchini. Add nuts. Bake at 325\u00b0 for 40 to 45 minutes in 3 greased bread pans.
Cool on racks.
