Aunt Pat'S Summer Salad - cooking recipe

Ingredients
    1 lb. cucumbers
    1 lb. zucchini
    salt
    wine vinegar
    1 1/2 lb. ripe tomatoes
    3/4 c. chopped red onions
    oil
    freshly ground pepper
    2 Tbsp. chopped mint
    1/4 c. chopped parsley
Preparation
    Peel, seed and chop cucumbers.
    Chop zucchini.
    Toss cucumber and zucchini with 2 teaspoons salt and 1/4 cup vinegar.
    Sit for 30 minutes.
    Peel, seed and chop tomatoes.
    Drain cucumbers and zucchini and toss with tomatoes and onions.
    Add vinegar and oil to taste, season with salt and pepper and toss with mint and parsley.
    Serves 4 to 6.
