Seafoam(Candy) - cooking recipe
Ingredients

1 1/2 c. light brown sugar
1/2 c. granulated sugar
1/2 c. hot water
1/4 c. light corn syrup
1/4 tsp. salt
2 egg whites
1 tsp. vanilla
1/2 c. chopped pecans (optional)
Preparation

Butter sides of heavy 1 1/2-quart saucepan.
In it combine sugars, water, corn syrup and salt.
Cook, stirring constantly, until sugar dissolves and mixture comes to boiling.
Then cook to hard ball stage (250\u00b0) without stirring.
Remove from heat. Immediately beat egg whites until stiff.
Pour hot syrup in a thin stream over beaten egg whites, beating constantly, at high speed on electric mixer.
Add vanilla.
Continue beating until mixture forms soft peak and begins to lose its gloss, about 10 minutes. Stir in nuts.
Drop by teaspoon onto waxed paper, swirling each candy to a peak.
