Beef With Onions - cooking recipe

Ingredients
    1 lb. beef (flank or top sirloin steak), julienne
    1/2 tsp. salt
    1 egg white
    1 Tbsp. cornstarch
    2 to 4 c. oil for deep frying
    3 or 4 onions, sliced
    1 Tbsp. wine or dry sherry
    1 Tbsp. sugar
    4 Tbsp. dark soy sauce
Preparation
    Combine beef, salt, egg white and cornstarch.
    Mix well with hands.
    Heat oil in wok.
    Deep-fry beef until it is seared. Drain.
    Reheat 2 tablespoons of oil in wok.
    Add onions.
    Stir-fry until soft and well-browned, about 20 minutes.
    Add beef.
    Add sherry, sugar and soy sauce.
    Stir-fry 1 minute, until beef is glazed and brown.
    Serves 4 to 6.
