Lemon Cake Pie - cooking recipe

6 Tbsp. butter
1/8 tsp. salt
1 1/2 C. sugar
1/3 C. lemon juice
grated rind of 1 lemon
3 eggs, separated
3 Tbsp. flour
1 1/2 C. milk
Preparation

Line 9 inch pie pan with pastry. Cream butter, salt and sugar. Add lemon juice, rind and egg yolks; beat until light and fluffy. Mix flour with small amount of milk and stir until smooth. Add remaining milk and combine with creamed mixture. Fold in stiffly beaten egg whites and pour into pastry shell. Bake at 450 degrees 10 minutes, reduce temperature to 325 degrees and bake 45-50 minutes longer, until firm. Makes 1 deep dish 9 inch pie.
