Banana Nut Bread - cooking recipe
Ingredients

2 large eggs, lightly beaten
1 c. mashed ripe bananas
1/2 c. margarine, melted
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 c. sugar
1/2 c. chopped pecans
1/4 c. coconut
1/4 c. raisins
Preparation

Combine first 4 ingredients in a large bowl.
Stir well. Combine flour, soda and sugar.
Add to banana mixture, stirring until well blended.
Stir in pecans, coconut and raisins.
Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan. Bake at 325\u00b0 for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan for 10 minutes. Cover with foil the last 15 minutes of baking to prevent overbrowning, if necessary.
