Potato Custard Pie - cooking recipe
Ingredients

1 medium potato
2 Tbsp. butter
3/4 c. sugar
1/8 tsp. salt
2 eggs, separated
1/2 c. milk
juice and grated rind of 1/2 lemon
plain pie pastry
Preparation

Boil potato.
Mash.
Add butter, sugar and salt; stir to creamy consistency.
Cool.
Add beaten egg yolks, milk, lemon juice and rind.
Mix well together.
Fold in stiffly beaten egg whites.
Pour into pastry shell.
Bake at 400\u00b0 for 25 minutes or until done.
