Crispy Oven-Fried Okra - cooking recipe

Ingredients
    1 3/4 lb. fresh okra
    1 1/2 c. yellow corn meal
    1/2 tsp. salt
    1/8 tsp. pepper
    1/2 c. nonfat buttermilk
    1 egg, lightly beaten
    Pam cooking spray
Preparation
    Wash okra; trim ends and cut into 1/2-inch pieces.
    Combine corn meal, salt and pepper in a medium bowl; stir and set aside. Combine buttermilk and egg in a large bowl; stir in okra.
    Let stand for 10 minutes.
    Dredge okra in corn meal.
    Place okra on a baking sheet coated with Pam.
    Bake at 450\u00b0 for 40 minutes, or until crisp. Stir often.
    Makes 12 servings
