Creamy Cabbage Soup(Microwave) - cooking recipe
Ingredients

1 large or 2 small baking potatoes, washed, dried and pricked several times
1 small yellow onion, peeled and thinly sliced (about 1 c.)
2 c. shredded green cabbage
1/2 c. heavy cream
parsley
1 Tbsp. unsalted butter
1 c. chicken broth
kosher salt
black pepper
Preparation

Wash, dry and pierce potatoes. Cook in microwave for 7 minutes. Remove from oven and set aside.
Place onions and butter in 4-cup glass measuring cup. Cover tightly with microwave plastic wrap. Cook for
3 minutes and remove from oven.
Uncover and stir in cabbage. Cover and cook for 4 minutes.
Peel and cut potatoes into chunks.
Place in work bowl of food processor.
Add cabbage and broth to potatoes.
Process until well combined, but not completely smooth.
Pour mixture into bowl and stir in cream. Add salt and pepper to taste.
Sprinkle with parsley, if desired.
