Turkish Beef Deluxe - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    1/4 c. chopped parsley
    1/4 c. chopped onions
    1/4 c. chopped green peppers
    1 medium tomato, chopped
    1 can tomato sauce
    2 potatoes, pared and cut in long wedges
    1 tomato, cut in wedges
    1 green pepper, cut in slices
    2 carrots, cut in sticks
    1 eggplant, cut in long wedges
    1 tsp. black pepper
    1/2 tsp. red pepper
    1 tsp. salt
Preparation
    Mix beef, parsley, onions, peppers, chopped tomatoes, 3/4 can of tomato sauce and spices.
    Spread in 9 x 13-inch baking pan. Arrange vegetable slices over the beef mixture.
    Thin remaining tomato sauce with a little water and pour over vegetables. Sprinkle with more salt and pepper, if desired.
    Bake in a 375\u00b0 oven, covered, for 1/2 hour or until done.
    Serve with rice.
