Lemon Pie - cooking recipe
Ingredients

1 1/2 c. sugar
4 Tbsp. all-purpose flour
4 Tbsp. cornstarch
1/2 tsp. salt
2 c. boiling water
3 whole eggs, beaten
1/2 c. lemon juice
grated rind of 2 lemons
Preparation

Mix sugar, flour, cornstarch and salt together.
Add boiling water while stirring constantly, using high heat until mixture begins to thicken, then cook slowly on low heat until thick.
Add beaten eggs and cook 2 minutes longer.
Add lemon juice and rind. Cool.
Pour into baked pie shell (9-inch).
Cover with meringue if desired.
