Top Of The World Chicken Salad - cooking recipe

Ingredients
    2 lb. chicken breasts, boneless, skinless
    1 c. mayonnaise
    2 Tbsp. peach juice
    1/2 c. heavy cream, whipped
    2 c. canned peaches, diced, drained
    salt and pepper to taste
Preparation
    Cook chicken breasts in 2 cups lightly salted water until tender, about 25 to 30 minutes.
    Cool and cut into medium pieces. Blend mayonnaise and peach juice until smooth.
    Fold in whipped cream and season to taste with salt and pepper.
    Add diced chicken and peaches and gently stir until blended.
    Chill.
    Serve on lettuce or Romaine.
