Chicken On A Cloud - cooking recipe

Ingredients
    3 large eggs
    1 1/2 c. milk
    1 Tbsp. butter, melted
    1 c. flour
    1 tsp. baking powder
    1 tsp. salt
    1/2 tsp. black pepper
    1/2 c. parsley
    1 (3 lb.) chicken, cut into pieces
    2 large cloves garlic, smashed
    3 Tbsp. butter
Preparation
    Heat oven to 450\u00b0.
    Using whisk, beat eggs, milk and melted butter in bowl.
    Combine flour, baking powder, salt and pepper and gradually add to egg mixture, beating until smooth.
    Stir in 1/2 cup parsley.
    Refrigerate batter until needed.
    Rub chicken pieces with smashed garlic.
    Melt 3 tablespoons of butter in skillet over medium heat.
    When light brown, add chicken, skin side down.
    Cook 2 to 3 minutes each side.
    Turn pieces, skin side up.
    Pour batter over chicken.
    Bake 25 to 30 minutes until chicken is cooked and \"cloud\" is puffed and brown.
    Sprinkle with additional parsley to serve.
