Fresh Tomato Coulis(Makes 2 Cups) - cooking recipe
Ingredients

4 ripe plum tomatoes
1/2 large cucumber, peeled, seeded and cut into 1/4-inch diced pieces
1 Tbsp. fresh snipped chives
1 Tbsp. chopped fresh dill
salt and freshly ground black pepper to taste
1 Tbsp. light olive oil
Preparation

Puree 3 of the tomatoes in a food processor or blender until smooth.
Transfer to a bowl.
Dice the remaining tomato and stir it, along with the cucumber, chives and dill, into the puree. Season with salt and pepper.
Slowly stir in olive oil until incorporated.
Cover and chill until ready to serve.
