Eggplant And Mushroom Casserole - cooking recipe
Ingredients

2 large eggplants, sliced
3 beaten eggs
2 c. grated American cheese
2 cans mushrooms and juice
Preparation

Sprinkle eggplant with salt and let stand 20 minutes in water. Gently squeeze out salt water.
Dip each slice in beaten egg and fry quickly in oil just until egg sets.
