Marinated Vegetable Italiano - cooking recipe

Ingredients
    9 c. assorted veggies
    3 cloves garlic, minced
    1/2 c. oil
    1/2 c. cider vinegar
    1/2 c. water
    1 tsp. salt
    1 tsp. oregano or Italian seasoning
    1/2 tsp. ground black pepper
    1 c. drained pitted ripe olives (optional)
Preparation
    In large skillet or Dutch oven, combine all ingredients, except olives.
    Bring to a boil.
    Reduce heat.
    Simmer 5 minutes or until veggies are tender-crisp.
    Add olives.
    Transfer to a bowl or storage container.
    Cover.
    Chill 6 hours or overnight. Makes about 9 cups.
