Mediterranean Linguine(It'S Easy And Delicious!) - cooking recipe
Ingredients

6 oz. linguine
1 c. sliced fresh mushrooms
1 medium green pepper, seeded and cut into thin strips
1 clove garlic, minced
1 (14 oz.) can artichoke hearts, drained and quartered
1/2 c. fat-free Italian dressing
3 Tbsp. sliced and pitted olives
1 Tbsp. chopped fresh parsley
2 oz. part-skim Mozzarella cheese, shredded (1/2 c.)
Preparation

Prepare linguine according to package directions, omitting salt and oil. Meanwhile, coat a large nonstick skillet with nonstick cooking spray; place over medium-high heat until hot. Add mushrooms, peppers and garlic; cook until vegetables are tender. Add artichokes, dressing, olives and parsley; cook, stirring occasionally until heated through, about 3 minutes. Combine vegetable mixture with linguine; toss well. Transfer mixture to serving dish. Sprinkle with cheese. Serve immediately. Makes 11 servings.
