Yankee Muffins - cooking recipe
Ingredients

2 c. shredded, unpeeled apples
1 1/3 c. brown sugar
1 c. chopped cranberries
1 c. shredded carrots
1 c. chopped pecans
2 1/2 c. flour
1 Tbsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
1 tsp. allspice
2 eggs, lightly beaten
1/2 c. vegetable oil
Preparation

In a large mixing bowl, combine apples and sugar.
Gently fold in cranberries, carrots and nuts.
Combine dry ingredients and add to mixing bowl.
Mix well to moisten.
Combine eggs and oil.
Stir into apple mixture.
Fill 18 greased muffin pans 2/3 full.
Bake 20 to 25 minutes at 375\u00b0.
Cool 5 minutes before removing from pans.
