Mexican Cornbread In A Jiffy - cooking recipe

2 boxes Jiffy corn muffin mix
2 eggs
2/3 c. milk
1/4 c. jalapeno pepper
1/2 c. chopped onions
1 (8 oz.) can whole kernel corn, drained
shortening or vegetable oil
Preparation

Preheat oven to 400\u00b0.
Mix corn muffin mix as directed on Jiffy box, adding pepper, onions and corn.
Pour into an oiled pan and bake for about 30 minutes or until golden brown.
