Lynda'S Frittata(Low-Fat) - cooking recipe

Ingredients
    1 small, chopped onion
    2 Tbsp. green and/or red pepper
    1 diced potatoes
    1/4 tsp. olive oil
    3 egg whites, whipped stiff
    3 egg yolks or 1/3 c. egg substitute)
Preparation
    In an 8 x 8-inch microwave dish, saute the onion, pepper and potatoes in olive oil for 3 minutes. Fold in whipped egg whites. Fold in egg yolks.
    Add to other ingredients in dish.
    Microwave on High for 3 minutes.
