Tuna Muffins - cooking recipe

Ingredients
    2 c. cooked brown rice
    3 Tbsp. Parmesan cheese
    1/4 tsp. pepper
    5 Tbsp. (heaping) low-fat yogurt
    1 (7 oz.) can tuna in water, drained and flaked
    1/2 c. chopped celery
    1/4 c. plus 1 Tbsp. chopped green onions
    1 Tbsp. parsley flakes
    2 tsp. soy sauce
    1 Tbsp. lemon juice
    3 egg whites
Preparation
    Preheat oven to 375\u00b0.
    Combine and mix together all ingredients except egg whites.
    Beat egg whites until stiff; fold into other mixture.
    Spray muffin tins with Pam and fill tins into a mound shape.
    Bake 35 to 40 minutes or until golden brown.
    Run a knife around each muffin to loosen.
