Golden Rice(Serves 6) - cooking recipe

Ingredients
    1 c. long grain basmati rice or regular rice
    1 c. homemade chicken stock
    1 c. water
    1 cinnamon stick
    1 bay leaf
    1/4 tsp. salt (optional)
    1/4 tsp. ground turmeric or 1/2 tsp. saffron
    2 Tbsp. slivered almonds
Preparation
    Rinse rice (basmati) in several changes of water before cooking.
    In a 2-quart saucepan over medium-high heat, bring chicken stock and water to a boil.
    Add rice, cinnamon, bay leaf and salt.
    Stir.
    Reduce heat and simmer, covered, for 20 minutes. Add turmeric or saffron and stir lightly with a fork.
    Continue to cook, covered, over low heat another 10 minutes or until rice is tender and liquid is absorbed.
    Remove cinnamon stick and bay leaf. Sprinkle with almonds and serve hot.
