Tommaso'S Marinara Sauce - cooking recipe

Ingredients
    4 Tbsp. olive oil
    1 small onion, chopped
    4 cloves fresh garlic, crushed and minced
    1 rib celery, minced
    2 carrots, minced
    2 doz. Italian plum tomatoes, peeled, seeded and chopped
    1/2 green bell pepper, chopped
    1/4 c. parsley, chopped
    1/4 c. dry white vermouth
    1 tsp. basil
    1 tsp. oregano
    salt and black pepper to taste
Preparation
    Place olive oil in medium size saucepan and heat until almost smoking. Add onion, garlic, celery, carrots and bell pepper and saute until semi-cooked.
    Add tomatoes, parsley, herbs and vermouth. Simmer 30 to 45 minutes. Salt and pepper to taste. Serve over pasta of choice. Sprinkle top with freshly grated imported Romano or Parmesan cheese.
