California Rice Casserole - cooking recipe
Ingredients

1 C. chopped onion
1/4 C. margarine
4 C. cooked rice
2 C. sour cream
1 C. cottage cheese
1 large bay leaf, crumbled
1/2 tsp. salt
1/8 tsp. pepper
2 - 4 oz. cans green chili peppers, drained and halved
2 C. grated sharp cheddar cheese
Preparation

Saute onion and margarine. Remove skillet from heat and stir in all other ingredients but peppers and cheese. Lightly grease a 13x9 pan. Lay half of rice mixture in casserole then top with half of pepper and half of the cheese. Repeat with second layer of rice, peppers and cheese. Bake uncovered at 375 degrees for 25 minutes.
