Hoe Cakes - cooking recipe
Ingredients

2 Tbsp. Crisco shortening or Crisco oil, divided
1 1/2 c. self-rising cornmeal
1/4 tsp. baking soda
1 1/4 c. low-fat buttermilk
1 egg, lightly beaten
Preparation

Combine cornmeal and baking soda in medium bowl.
Add buttermilk, egg and one tablespoon melted shortening.
Stir just until dry ingredients are moistened.
Heat 1 tablespoon Crisco shortening or Crisco oil on medium-high heat in heavy large nonstick skillet.
Pour 1/4 cup batter into skillet for each hoe cake.
Fry 1 to 2 minutes or until golden brown on each side. Drain on paper towels.
Serve immediately.
