Green Tomato Relish - cooking recipe

4 qt. chopped green tomatoes
3/4 c. salt
7 c. chopped cabbage
6 c. vinegar (white)
1 1/3 c. chopped onion
1 c. green pepper
1/2 c. diced pimiento
3 c. sugar
1 Tbsp. celery seed
1 Tbsp. mustard seed
1/2 cinnamon stick
2 tsp. whole cloves
Preparation

Chop up tomatoes (use blender; with small tomatoes, do not peel) and mix with the salt.
Let stand overnight.
In morning, drain off and discard the juice.
Add cabbage and vinegar in large saucepan with tomatoes.
Boil 1/2 hour, then add the onion, green pepper and pimiento.
Add sugar, celery and mustard seed.
Put the cinnamon and cloves in a cheesecloth bag and add to pan.
Cook until the onion is tender.
Remove the cheesecloth bag and add to pan.
Cook until the onion is tender.
Remove the cheesecloth bag. Pack in hot sterilized jars and seal at once.
Makes 7 or 8 pints, depending on how much cabbage used.
