Chicken And Apricots - cooking recipe
Ingredients

1 chicken, skinned and cut-up
1/4 c. white wine or water
1 c. canned, pitted apricots, drained
1/4 c. diced, dried apricots
1/2 c. whole dried cranberries or cherries
1/2 c. coarsely chopped onion
1/2 c. apricot preserves
2 Tbsp. lemon juice
1/2 tsp. cinnamon
1 tsp. lite salt (optional)
chopped or whole parsley for garnish
Preparation

In large nonstick skillet, combine chicken, onion and wine or water; mix in apricot preserves, cover and cook over medium-low heat for 20 to 25 minutes, stirring occasionally.
Add the remaining ingredients and cook for 5 minutes, stirring occasionally, or until chicken is done.
Garnish and serve.
