Carrot Cookies - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. shortening
    1 egg
    1 tsp. lemon extract
    1/2 c. finely shredded carrots
    1/2 c. raisins
    2 c. sifted flour
    2 tsp. baking powder
    1/2 tsp. salt
Preparation
    Cream sugar with shortening.
    Beat in egg and lemon extract. Stir in carrots and raisins, then sifted dry ingredients.
    Roll in 1-inch balls; flatten with back of spoon.
    Put on baking sheet. Bake at 400\u00b0 for 10 to 12 minutes.
    Makes 3 dozen.
