Marinated Mushroom Salad - cooking recipe

Ingredients
    3/4 c. vegetable oil
    1/2 c. vinegar
    1/4 c. water
    2 tsp. salt
    2 tsp. garlic powder
    1/4 tsp. pepper
    1 lb. fresh mushrooms, sliced
    1 1/2 c. carrots, thinly sliced
    1 c. green pepper, diced
    1/2 c. onions, sliced in rings
    1 (4 oz.) can pimentos, drained and diced
    2 tsp. basil
Preparation
    In large saucepan, combine oil, vinegar, water, salt, garlic powder and pepper and bring to a boiling point. Reduce heat. Cover and simmer 5 minutes. Add mushrooms, carrots, green pepper and onion. Cover and simmer 3 minutes. Add pimentos and basil. Chill 1 day before serving.
    Makes 5 cups.
