Zucchini Appetizers - cooking recipe

Ingredients
    3 c. grated zucchini
    1 c. buttermilk baking mix (Bisquick)
    1/2 c. finely chopped onion
    1/2 c. freshly grated Parmesan or Romano cheese
    2 Tbsp. chopped fresh parsley
    1/2 tsp. salt
    dash of pepper
    1/2 tsp. oregano
    1 small clove garlic, mashed
    1/2 c. oil
    4 beaten eggs
Preparation
    Combine zucchini, baking mix, onion, cheese, parsley, salt, pepper, oregano, garlic, oil and eggs.
    Pour into a greased 2-quart shallow baking dish.
    Bake 30 to 35 minutes at 350\u00b0. (Reduce temperature 25\u00b0 if using ovenproof glass dish.)
    Let cool and cut into squares.
    Serves 6 as a vegetable.
