Black-Eyed Pea Casserole - cooking recipe

Ingredients
    1 onion
    1 lb. pork sausage (bulk)
    2 c. grated Cheddar cheese
    15 oz. can black-eyed peas (undrained)
    2 eggs
    1 1/2 c. milk
    1 (4 oz.) can chilies (hot, optional)
    2 c. self-rising meal
Preparation
    Saute onion and pork sausage.
    Drain fat.
    Mix with chilies. Add remaining ingredients.
    Bake at 350\u00b0 for 50 to 55 minutes in 3-quart casserole.
