Authentic Neapolitan Sauce For 30(A Crowd Pleaser) - cooking recipe

5 (29 oz.) cans Hunt's tomato puree
1 (28 oz.) can Hunt's crushed tomatoes
3 (6 oz.) cans tomato paste
1 1/2 lb. fresh mushrooms, cleaned and sliced
2 lb. Italian sausage (about 8 links)
1 whole garlic bulb, separated into cloves and peeled
sweet basil (dry)
about 6 Tbsp. extra virgin olive oil (enough to cover bottom of pan)
1 tsp. sugar per can tomato puree
1 1/2 puree cans water (about 45 oz.)
Preparation

In large aluminum saucepan, heat olive oil until hot but not smoking.
Add sausage and garlic cloves; brown on all sides.
(Do not burn garlic.)
Remove sausage and garlic; remove pan from heat.
To the pan, add tomato puree, one can at a time, stirring as you add each.
Add crushed tomatoes, sugar and water; stir vigorously to blend.
