Best Ever Lemon Pie - cooking recipe
Ingredients

1 baked 9-inch pie shell
6 Tbsp. cornstarch
1/3 c. lemon juice
3 Tbsp. butter
1 1/2 tsp. lemon extract
1 1/4 c. sugar
2 c. water
3 eggs, separated
2 tsp. vinegar
Preparation

Mix sugar and
cornstarch together in a pan.
Add the 2 cups of\twater
and
cook
over\tmoderate heat, stirring until slightly thickened.\t(May be cooked in microwave.) Combine egg yolks with juice
and\tbeat.
Stir a small amount of hot cornstarch mixture into yolks.
Stir all of yolks into cornstarch mixture.
Cook until
thick,
stirring frequently.
Add lemon extract, butter and
vinegar.
Pour
into
pie
shell and let cool.
Cover with meringue and brown.
