Snapper Vera Cruz - cooking recipe
Ingredients

1 red bell pepper
1 yellow bell pepper
1 stalk celery
1 c. picante sauce
olive oil
1/2 c. flour
salt and pepper to taste
4 fresh red snapper filets
Preparation

Cut vegetables into long strips.
Saute in olive oil only until wilted; add picante sauce and saute one more minute.\tSet aside.
Dust filets in flour seasoned with salt and pepper.
Saute filets in olive oil over high heat.
When golden brown turn and reduce heat.
Top with vegetable mixture and sauce. Simmer, covered 10 minutes.
Serve over rice.
