Shrimp With Lobster Sauce - cooking recipe

Ingredients
    1/2 lb. raw shrimp, shelled
    1/4 lb. ground pork
    1/4 c. peanut oil
    1 Tbsp. sherry
    1 Tbsp. fermented black beans, chopped
    1 Tbsp. finely chopped garlic
    1 Tbsp. soy sauce
    1/2 tsp. salt
    1/4 tsp. sugar
    1/4 tsp. ground black pepper
    2 scallions, chopped (including tops)
    1 c. chicken stock
    2 Tbsp. cornstarch, dissolved in 3 Tbsp. chicken stock
    1 egg, lightly beaten
Preparation
    Have all ingredients measured and ready.
    Set wok or skillet over fire and heat for 30 seconds on high.
    Add 2 tablespoons of oil and heat for 30 seconds on high.
    Add shrimp and stir-fry for about 1 minute or until they turn pink.
    Add wine and stir for 30 seconds.
    Remove shrimp from wok and set aside.
    Add more oil to wok and reheat.
    Add beans and garlic to wok and stir-fry for 2 to 3 minutes.
    Add soy, salt, sugar, pepper and shrimp.
    Add chicken stock and bring to a slow boil.
    Add cornstarch mix and stir until it thickens.
    Slowly add egg, stirring constantly, while adding. Remove from heat; stir in scallions and serve at once over rice.
