Versatile Rolls - cooking recipe

Ingredients
    2 c. milk
    5 Tbsp. salt
    1/4 c. sugar
    2 cakes compressed yeast
    1/4 c. water at 85~
    8 to 10 c. flour
Preparation
    Scald milk.
    Add salt and sugar and cool mixture to 85\u00b0. Dissolve yeast in water.
    Combine milk and yeast mixtures and mix until smooth.
    Gradually add flour and mix after each addition. Knead well; let rise covered until double in bulk.
    Shape dough as you wish.
    Permit rolls to rise in covered pans until doubled. Bake for about 40 minutes at 275\u00b0.
    Makes 5 dozen rolls.
