Chicken Cream Cheese Enchiladas - cooking recipe

1 onion
2 Tbsp. margarine
2 c. cooked, diced chicken
1/2 c. chopped pimento
2 (3 oz.) pkg. cream cheese
salt and pepper
6-inch tortillas
2/3 c. heavy cream
2 c. shredded Monterey Jack cheese
Preparation

Chop and saute onions in margarine over moderate heat (about 20 minutes).
Remove pan from heat and add cooked chicken, pimentos and cubed cream cheese.
Mix and add salt and pepper to taste.
Put over heat just to warm mixture up; stir.
