Western Omelette - cooking recipe

Ingredients
    1 c. chopped onions
    1/2 c. water
    1 c. chopped bell pepper
    4 c. mashed tofu
    6 Tbsp. CHICKEN-STYLE SEASONING
    1 tsp. onion powder
    4 tsp. yeast flakes
    1 tsp. garlic powder
    1/2 tsp. salt
    4 Tbsp. chopped parsley
    1 c. chopped tomato
    1 1/4 c. CASHEW CHEESE
Preparation
    Drain and mash tofu with a fork.
    Saute onions and bell pepper in a little water.
    Add tofu and seasonings.
    When tofu is done, add
    CASHEW
    CHEESE and tomato dices.
    Stir together well.
    Pour into
    a Pam-sprayed 8 x 8-inch baking dish.
    Bake at 350\u00b0 for 25 minutes.
    Serves 8.
