Chicken Mozzarella - cooking recipe
Ingredients

1 large whole chicken breast, skinned and halved
1 medium onion, quartered
1 (4 oz.) can mushrooms, sliced and drained
1/2 stick butter or margarine
salt and pepper
2 medium tomatoes, peeled and quartered
1 bell pepper, sliced
2 large slices Mozzarella cheese
1 oz. olive oil
Preparation

Preheat frypan to medium-high.
Add butter and olive oil. When heated, add chicken, bone side down, turning 2 or 3 times until done, 12 to 15 minutes.
Remove chicken; set aside.
Add tomatoes, onion and bell pepper with salt and pepper to taste, to frypan.
Reduce heat; stir-fry vegetables until done.
Place chicken on top of vegetables.
Cover chicken breasts with mushrooms until cheese is melted.
Serve with French bread.
