California Vegetable Quiche - cooking recipe

Ingredients
    1 lb. summer squash (about 3 c.)
    4 eggs, well beaten
    1 tsp. dill, basil, oregano or tarragon
    1 to 1 1/2 tsp. salt
    2 c. grated Monterey Jack cheese
    1/4 c. grated Parmesan cheese
Preparation
    Grate squash coarsely into bowl.
    Sprinkle with salt and let stand 10 minutes.
    Squeeze out all liquid.
    Preheat oven to 350\u00b0. In a large mixing bowl, combine squash, eggs, cheese and seasonings.
    Pour into 8-inch square baking dish and top with Parmesan cheese.
    Bake 30 to 40 minutes or until set.
    Knife inserted at outer edge comes out clean.
