Low-Fat Zucchini Bread - cooking recipe

Ingredients
    3 c. flour
    1 tsp. baking soda
    1/4 tsp. baking powder
    1 1/2 tsp. cinnamon
    1 tsp. salt
    3 eggs or egg substitute
    3 tsp. vanilla
    1 c. applesauce
    1 1/2 c. sugar
    2 c. grated zucchini
    1 c. raisins
    1 c. chopped nuts (optional)
Preparation
    Spray and flour 2 loaf pans.
    Mix flour, baking soda, baking powder, cinnamon and salt.
    In another pan, beat eggs; add vanilla, applesauce and sugar.
    Add the dry ingredients gradually. Stir in the zucchini, raisins and nuts.
    Divide into loaf pans and bake at 325\u00b0 for 1 hour.
    Freezes well.
