Empanada Gallegra (Chicken Pie) - cooking recipe

Ingredients
    2 (9-inch) pie shells
    1 (4-5 lb) chicken
    1 medium onion, quartered
    1 medium onion, diced
    1 medium green pepper
    1/4 c. olive oil
    1 (8 oz. ) can tomatoes
    Salt and Pepper to taste
Preparation
    Boil chicken in water with the quartered onion for 30 minutes. When cool, tear off the bone and tear into bite size chucks. In frying pan heat oil; add diced onions and green pepper and cook for 8 minutes. Add tomatoes and chicken. Pour in pie shell and cover with second pie shell. Bake in 375 degree oven for 30 minutes or until golden brown.
