Chunky Beef-Fritters - cooking recipe

Ingredients
    2 lb. cooked, unseasoned, cold roast beef (chuck, rump or round), cut into bite-size chunks (1/2 to 1-inch size)
    3 eggs
    1 Tbsp. flour
    6 Tbsp. milk
    1 1/2 c. self-rising flour
    1/4 tsp. black pepper
    4 tsp. salt
Preparation
    Mix milk with 1 tablespoon of flour and stir into eggs.
    Mix together flour, black pepper and salt.
    Dip roast beef chunk in egg mixture and roll in flour mixture.
    Drop floured beef chunks into hot cooking oil and deep fry until brown (use medium heat).
    Drain and serve hot.
    Takes about 15 minutes and yields 4 to 6 servings (time does not include cooking time for roast).
    Serve on divided serving dish surrounded by pickles, crab apple or cherry tomatoes, green pepper rings, carrot curls, celery sticks and parsley.
    Vary garnishes according to your taste.
