Indian-Style Oven-Fried Chicken - cooking recipe

Ingredients
    2 Tbsp. butter or margarine
    1 1/2 tsp. curry powder
    1/4 tsp. ground red pepper
    1/2 c. dry roasted peanuts
    1/3 c. coconut
    1/4 c. yellow cornmeal
    1 tsp. paprika
    1/4 tsp. salt
    1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
Preparation
    In a small saucepan, melt butter or margarine over medium heat. Stir in curry powder and red pepper.
    Cook and stir for 1 minute. Set aside.
    In a blender container or a food processor combine peanuts and coconut.
    Blend or process until peanuts are ground. Transfer mixture to a pie plate or shallow mixing bowl.
    Stir in cornmeal, paprika and salt.
    Set aside.
