Stir-Fried Chicken And Vegetables - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 whole chicken breasts, skinned, boned and cut into 1 inch pieces (about 1 lb. boneless)
    2 c. broccoli florets
    1 small red or green pepper, chunked
    2 c. cauliflower florets
    2 carrots, chucked
    1/2 c. sliced onion
    1 large clove garlic, minced (optional)
    3 c. V-8 vegetable juice
    2 Tbsp. cornstarch
    2 Tbsp. lite soy sauce
    2 tsp. brown sugar
    1 tsp. ginger
    5 c. cooked rice
Preparation
    In skillet, heat oil and cook chicken a few pieces at a time, until lightly browned.
    Drain on paper towel.
    In same skillet over medium heat, cook vegetables until they are tender-crisp.
    In small bowl stir together V-8 juice, cornstarch, soy sauce, sugar and ginger.
    Gradually stir into vegetables.
    Cook until boils. Add chicken and heat through, stirring occasionally.
    Serve over hot cooked rice.
