Country Style Omelette - cooking recipe

Ingredients
    6 eggs
    2 Tbsp. water
    dash of salt
    dash of black pepper
    1/2 lb. pork sausage
    1 onion, finely chopped
    1 Tbsp. butter or margarine
    2 medium potatoes, shredded
    fresh thyme or parsley (for garnish)
    red pepper (for garnish)
Preparation
    In a large skillet, saute the pork sausage until no longer pink, breaking up sausages.
    Add the onion and butter.
    Saute a few minutes longer until onion is soft, not brown.
    Add the shredded potatoes.
    Saute until soft.
    Beat eggs, salt, pepper and water and pour over sausage-potato mixture.
    Cook on medium heat. As eggs begin to set, push cooked portion to center of pan.
    When eggs are light brown on bottom and almost set on top, sprinkle with parsley or thyme.
    Serve directly from pan with tomato salad. Makes 4 servings.
