Shrimp Gumbo - cooking recipe
Ingredients

3/4 c. oil
3/4 c. flour
1 c. onions
1 c. celery
1 c. green peppers
1 1/2 Tbsp. chopped garlic
1 c. diced okra (optional)
1/4 c. green onion tops
1 Tbsp. salt
1 tsp. thyme
1/8 tsp. red pepper
1 large can tomatoes
5 c. water
3 lb. shrimp
Preparation

Combine oil and flour in skillet and make a dark roux or gravy. Add onions, celery, green peppers, garlic and okra (if using), plus onion tops. Cook until vegetables are soft and add seasonings and tomatoes. Add water and shrimp (may be cut in half). Cook about 1/2 hour or until shrimp are done. Serve over rice.
